Last week I had a major craving for sun gold tomatoes, but when I couldn’t find any in the grocery store I adapted this Bon Appetit recipe into my own pasta-tomato-combo.
- Olive oil
- 8 oz. tomatoes
- 2 cloves spring garlic, sliced
- Fresh basil, chopped
- Spaghetti – or your other pasta of choice
- Shaved parmesan or cheese of your choice (I really like Trader Joe’s Italian blend)
In a saucepan combine tomatoes, garlic and olive oil. Cook tomatoes, flattening with the end of a wooden spoon until they’ve blistered and split open. Boil water and add spaghetti when it reaches rolling boil. After pasta is cooked, strain and return to pot. Once tomatoes are soft add to pot with cooked pasta and stir. Top with parmesan and fresh basil.
