Though I’m not a vegan myself, I can’t get over how adorable (and delicious) recipes from The Vegan Stoner are. The illustrations are delightful and the instructions are blessedly easy–usually no more than 10 steps.
I made these tofu chilaquiles the other night for dinner because–let’s be honest–I’m a sucker for avocado and anything involving enchilada sauce. I thought about retyping the recipe but the original was too perfect not to use.
